Cauliflower Tacos

Ingredients:

1 small Head Cauliflower (about 1 1/2 cups)

1 Carrot cut into fine julienne (about 1 1/2 cups)
1/2 Head Red Cabbage, finely shredded (about 1 1/2 cups)
1/4 cup rice vinegar
1/4 cup chopped cilantro
2 large avocados

2 Tbs Soy Sauce
2 Tbs Chili Powder
2 tsp Ground Cumin
1 tsp Smoked Paprika
1/2 tsp Garlic Powder
1/2 tsp Onion Powder
1/4 tsp Ground Pepper
1/4 tsp Salt

Preheat oven to 300 degrees F
Combine the shredded carrots, cilantro, and cabbage in a large bowl.
Add the vinegar and stir, then add a pinch of salt and pepper to taste.

Remove the core from your cauliflower and cut into small pieces.
Chop the cauliflower into fine pieces, and then add it to a large bowl.

Stir in soy sauce, paprika, garlic powder, and other spices.
Make sure everything is mixed thoroughly.

Spread mixture onto a parchment lined baking sheet and bake for 30 minutes.
Stir lightly and continue baking for an additional 10-15 minutes.

While waiting for the cauliflower to finish, remove the pits from your avocados,
And slice them into fine slices.

Assemble the tacos in your favorite tortilla by adding the cauliflower mixture first,
then the slaw mixture, and lastly, top them with the sliced avocados.
